- Chickpeas - 240 grams (cooked)
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 30 grams (finely chopped)
- Fresh cilantro - 30 grams (finely chopped)
- Fresh mint - 15 grams (finely chopped)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat flour - 50 grams
- Olive oil - 2 tablespoons (for frying)
- Whole grain burger buns - 2
- Tomato - 1 (sliced)
- Cucumber - 1 (sliced)
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
- Add the chopped red onion, minced garlic, parsley, cilantro, mint, cumin, coriander, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are thoroughly combined.
- Gradually add the whole wheat flour to the mixture until it binds together. If the mixture is too wet, add a little more flour as needed.
- Divide the mixture into two equal portions and shape them into patties.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by mixing tahini with lemon juice and a little water until smooth.
- To assemble, place each burger patty on a whole grain bun, add sliced tomato and cucumber, and drizzle with tahini sauce. Serve immediately.
