Ingredients

  • Green beans - 300 grams, trimmed
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 250 milliliters
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Add the minced garlic, ground cumin, and ground coriander to the pot. Sauté for another minute until fragrant.
  3. Stir in the diced tomatoes, salt, and black pepper. Cook for about 5 minutes, allowing the mixture to thicken slightly.
  4. Add the trimmed green beans and water to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer for 15-20 minutes, or until the green beans are tender.
  5. Stir in the lemon juice and adjust seasoning if necessary. Remove from heat.
  6. Serve hot, garnished with fresh parsley.
