Ingredients

  • Brown rice flour - 1 cup
  • Tapioca flour - 1/2 cup
  • Psyllium husk - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Warm water - 3/4 cup
  • Olive oil - 1 tablespoon
  • Za'atar spice blend - 1 tablespoon

Steps

  1. In a large mixing bowl, combine brown rice flour, tapioca flour, psyllium husk, baking powder, and salt. Mix well until all dry ingredients are evenly distributed.
  2. Gradually add warm water and olive oil to the dry mixture, stirring continuously until a dough forms.
  3. Knead the dough for about 2-3 minutes until it becomes smooth and pliable. If the dough is too sticky, add a little more brown rice flour.
  4. Divide the dough into 4 equal pieces and shape each piece into a ball.
  5. On a floured surface (using brown rice flour), roll out each ball into a thin circle, about 1/4 inch thick.
  6. Heat a non-stick skillet over medium heat. Once hot, place one rolled flatbread in the skillet.
  7. Cook for about 2-3 minutes on each side or until lightly golden and cooked through. Repeat with the remaining flatbreads.
  8. Once cooked, sprinkle za'atar on top of each flatbread while still warm, pressing it lightly to adhere.
  9. Serve warm with your favorite dips or enjoy as a snack.
