- Brown rice flour - 1 cup
- Tapioca flour - 1/2 cup
- Psyllium husk - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Warm water - 3/4 cup
- Olive oil - 1 tablespoon
- Za'atar spice blend - 1 tablespoon
Steps
- In a large mixing bowl, combine brown rice flour, tapioca flour, psyllium husk, baking powder, and salt. Mix well until all dry ingredients are evenly distributed.
- Gradually add warm water and olive oil to the dry mixture, stirring continuously until a dough forms.
- Knead the dough for about 2-3 minutes until it becomes smooth and pliable. If the dough is too sticky, add a little more brown rice flour.
- Divide the dough into 4 equal pieces and shape each piece into a ball.
- On a floured surface (using brown rice flour), roll out each ball into a thin circle, about 1/4 inch thick.
- Heat a non-stick skillet over medium heat. Once hot, place one rolled flatbread in the skillet.
- Cook for about 2-3 minutes on each side or until lightly golden and cooked through. Repeat with the remaining flatbreads.
- Once cooked, sprinkle za'atar on top of each flatbread while still warm, pressing it lightly to adhere.
- Serve warm with your favorite dips or enjoy as a snack.
