  • Tomato paste - 2 tablespoons
  • Zucchini, diced - 150 grams
  • Bell pepper, diced - 100 grams
  • Eggplant, diced - 100 grams
  • Chicken broth - 400 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chicken thighs to the pot and brown them on all sides for about 8-10 minutes.
