  • Chicken breast - 300 grams
  • Cauliflower - 400 grams

  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chicken broth - 250 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets. Use a food processor to pulse the florets until they resemble rice grains. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  4. Cut the chicken breast into bite-sized pieces and add them to the skillet. Season with ground cumin, ground coriander, ground cinnamon, salt, and black pepper. Cook for 5-7 minutes until the chicken is browned and cooked through.
  5. Stir in the cauliflower rice and chicken broth, mixing well. Cover the skillet and let it simmer for about 10 minutes, or until the cauliflower is tender and the liquid has absorbed.
  6. Remove the skillet from heat and stir in the chopped parsley. Serve hot, garnished with toasted pine nuts on top.
