Ingredients
- Chicken breast - 300 grams
- Cauliflower - 1 small head (about 400 grams)
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened, then add the minced garlic and cook for an additional minute.
- Cut the chicken breast into bite-sized pieces and add them to the skillet. Season with cumin, coriander, paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
- In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the cauliflower rice and stir-fry for 5-6 minutes until tender but still slightly crunchy. Season with a pinch of salt and pepper if desired.
- Once the chicken is cooked, combine it with the cauliflower rice in the skillet. Stir in the chopped parsley and lemon juice, mixing well until everything is evenly combined.
- Serve hot, garnished with additional parsley if desired.
