Ingredients

  • Chicken breast - 300 grams
  • Cauliflower - 1 small head (about 400 grams)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened, then add the minced garlic and cook for an additional minute.
  3. Cut the chicken breast into bite-sized pieces and add them to the skillet. Season with cumin, coriander, paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  4. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the cauliflower rice and stir-fry for 5-6 minutes until tender but still slightly crunchy. Season with a pinch of salt and pepper if desired.
  5. Once the chicken is cooked, combine it with the cauliflower rice in the skillet. Stir in the chopped parsley and lemon juice, mixing well until everything is evenly combined.
  6. Serve hot, garnished with additional parsley if desired.
