Ingredients

  • Chicken breast - 250 grams, diced
  • Cauliflower - 1 medium head (about 400 grams), grated into rice-like texture
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Pine nuts - 2 tablespoons, toasted (optional)

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the diced chicken breast to the skillet and season with cumin, paprika, turmeric, salt, and black pepper. Cook for about 7-10 minutes until the chicken is cooked through and no longer pink.
  5. While the chicken is cooking, prepare the cauliflower rice by grating the florets using a box grater or food processor until it resembles rice.
  6. Once the chicken is cooked, push it to one side of the skillet and add the remaining tablespoon of olive oil to the empty side.
  7. Add the cauliflower rice to the skillet, stirring to combine with the chicken. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  8. Stir in chopped parsley and lemon juice, mixing everything well.
  9. Serve hot, garnished with toasted pine nuts if desired.
