Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Ground lamb - 200g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30g, toasted
- Almonds - 30g, toasted and chopped
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and black pepper, and toss to coat.
- Roast the cauliflower in the oven for 20-25 minutes, or until golden and tender, tossing halfway through.
- While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground lamb. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
- Stir in the cinnamon, allspice, salt, and black pepper. Mix well to combine and cook for another 2 minutes to let the spices meld.
- Once the cauliflower is done roasting, add it to the skillet with the lamb mixture. Gently fold in the toasted pine nuts and chopped almonds.
- Remove from heat and garnish with fresh parsley before serving.
