Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Ground lamb - 200g
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30g, toasted
  • Almonds - 30g, toasted and chopped
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and black pepper, and toss to coat.
  3. Roast the cauliflower in the oven for 20-25 minutes, or until golden and tender, tossing halfway through.
  4. While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  6. Increase the heat to medium-high and add the ground lamb. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  7. Stir in the cinnamon, allspice, salt, and black pepper. Mix well to combine and cook for another 2 minutes to let the spices meld.
  8. Once the cauliflower is done roasting, add it to the skillet with the lamb mixture. Gently fold in the toasted pine nuts and chopped almonds.
  9. Remove from heat and garnish with fresh parsley before serving.
