- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon

- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pita bread - 2 pieces
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1/2 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Tahini sauce - for drizzling
Steps
- In a bowl, combine olive oil, minced garlic, yogurt, lemon juice, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
- Add the sliced lamb to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes (or up to overnight for stronger flavor).
- Preheat a grill or grill pan over medium-high heat.
- Remove the lamb from the marinade and thread onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to prevent burning).
- Grill the lamb skewers for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- While the lamb cooks, prepare the toppings by dicing the tomato, cucumber, and slicing the red onion. Chop the fresh parsley.
- Once the lamb is done, remove it from the grill and let it rest for a few minutes before slicing into bite-sized pieces.
- Warm the pita bread on the grill for about 1 minute on each side.
