Ingredients

  • Lamb shoulder - 300 grams, thinly sliced

  • Garlic - 3 cloves, minced
  • Yogurt - 100 grams
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pita bread - 2 pieces
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1/2 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini sauce - for drizzling

Steps

  1. In a bowl, combine olive oil, minced garlic, yogurt, lemon juice, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
  2. Add the sliced lamb to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes (or up to overnight for stronger flavor).
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the lamb from the marinade and thread onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to prevent burning).
  5. Grill the lamb skewers for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. While the lamb cooks, prepare the toppings by dicing the tomato, cucumber, and slicing the red onion. Chop the fresh parsley.
  7. Once the lamb is done, remove it from the grill and let it rest for a few minutes before slicing into bite-sized pieces.
  8. Warm the pita bread on the grill for about 1 minute on each side.
  9. To assemble, take a piece of pita, add a portion of grilled lamb, top with diced vegetables, parsley, and a drizzle of tahini sauce.
