Ingredients

  • Lamb shank - 2 pieces (about 800g total)
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, finely chopped
  • Lemon juice - 60 ml
  • Olive oil - 60 ml
  • Ground cumin - 1 tsp
  • Ground coriander - 1 tsp
  • Paprika - 1 tsp
  • Cinnamon - 1/2 tsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Fresh parsley - 2 tbsp, chopped
  • Water - 500 ml

Steps

  1. In a large bowl, combine minced garlic, chopped onion, lemon juice, olive oil, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper to create the marinade.
  2. Add the lamb shanks to the marinade and coat them thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. Preheat your oven to 160°C (320°F). Transfer the marinated lamb shanks to a Dutch oven or a deep baking dish.
  4. Pour water into the dish around the shanks, cover tightly with a lid or aluminum foil, and place it in the preheated oven.
  5. Cook for about 2 hours, or until the meat is tender and falls off the bone.
  6. Once cooked, remove the lamb shanks from the oven and let them rest for 10 minutes before serving.
  7. Garnish with chopped fresh parsley and serve with grilled vegetables or gluten-free rice.
