Ingredients
- Lamb shank - 2 pieces (about 800g total)
- Garlic - 4 cloves, minced
- Onion - 1 medium, finely chopped
- Lemon juice - 60 ml
- Olive oil - 60 ml
- Ground cumin - 1 tsp
- Ground coriander - 1 tsp
- Paprika - 1 tsp
- Cinnamon - 1/2 tsp
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Fresh parsley - 2 tbsp, chopped
- Water - 500 ml
Steps
- In a large bowl, combine minced garlic, chopped onion, lemon juice, olive oil, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper to create the marinade.
- Add the lamb shanks to the marinade and coat them thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
- Preheat your oven to 160°C (320°F). Transfer the marinated lamb shanks to a Dutch oven or a deep baking dish.
- Pour water into the dish around the shanks, cover tightly with a lid or aluminum foil, and place it in the preheated oven.
- Cook for about 2 hours, or until the meat is tender and falls off the bone.
- Once cooked, remove the lamb shanks from the oven and let them rest for 10 minutes before serving.
- Garnish with chopped fresh parsley and serve with grilled vegetables or gluten-free rice.
