Ingredients
- Lamb chops - 4 pieces (about 400g)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh lemon juice - 1 tablespoon
- Fresh parsley - 1/4 cup, chopped
- Tomato - 1 medium, diced
- Cucumber - 1/2 medium, diced
- Bulgar wheat - 1/4 cup
- Mint leaves - 1 tablespoon, chopped
- Water - 1/2 cup
Steps
- In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice to create the marinade.
- Add the lamb chops to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
- While the lamb is marinating, prepare the tabbouleh salad. Rinse the bulgar wheat, then soak it in 1/2 cup of water for about 20 minutes until it absorbs the water and softens.
- In a large bowl, combine the soaked bulgar wheat, chopped parsley, diced tomato, diced cucumber, and chopped mint leaves. Mix well and set aside.
- Preheat a grill or grill pan over medium-high heat. Remove the lamb chops from the marinade and grill for 4-5 minutes on each side for medium-rare, or until desired doneness.
- Let the lamb chops rest for a few minutes before serving them alongside the tabbouleh salad.
