Ingredients

  • Lamb chops - 4 pieces (about 400g)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced

  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley - 1/4 cup, chopped
  • Tomato - 1 medium, diced
  • Cucumber - 1/2 medium, diced
  • Bulgar wheat - 1/4 cup
  • Mint leaves - 1 tablespoon, chopped
  • Water - 1/2 cup

Steps

  1. In a bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice to create the marinade.
  2. Add the lamb chops to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  3. While the lamb is marinating, prepare the tabbouleh salad. Rinse the bulgar wheat, then soak it in 1/2 cup of water for about 20 minutes until it absorbs the water and softens.
  4. In a large bowl, combine the soaked bulgar wheat, chopped parsley, diced tomato, diced cucumber, and chopped mint leaves. Mix well and set aside.
  5. Preheat a grill or grill pan over medium-high heat. Remove the lamb chops from the marinade and grill for 4-5 minutes on each side for medium-rare, or until desired doneness.
  6. Let the lamb chops rest for a few minutes before serving them alongside the tabbouleh salad.
