Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Canned chickpeas - 200 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Water - 250 ml

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides for about 5-7 minutes.
  4. Stir in the ground cumin, coriander, paprika, salt, and black pepper. Mix well to coat the lamb in the spices.
  5. Add the drained chickpeas and water to the skillet. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 25-30 minutes, or until the lamb is tender and the flavors meld together, stirring occasionally.
  7. Once cooked, remove from heat and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
