- Lamb shoulder - 300 grams, cut into 2.5 cm cubes
- Canned chickpeas - 200 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Water - 250 ml
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides for about 5-7 minutes.
- Stir in the ground cumin, coriander, paprika, salt, and black pepper. Mix well to coat the lamb in the spices.
- Add the drained chickpeas and water to the skillet. Bring to a boil, then reduce heat to low and cover.
- Simmer for 25-30 minutes, or until the lamb is tender and the flavors meld together, stirring occasionally.
- Once cooked, remove from heat and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
