Ingredients

  • Ground lamb - 300 grams
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Parsley - 30 grams (finely chopped)
  • Cinnamon - 1 teaspoon
  • Allspice - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams (toasted)
  • Olive oil - 1 tablespoon
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 50 milliliters

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large mixing bowl, combine the ground lamb, onion, garlic, parsley, cinnamon, allspice, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  3. Add the toasted pine nuts to the meat mixture and mix gently to combine.
  4. Transfer the meat mixture to a baking dish and spread it evenly to about 2.5 cm thick. Use a spatula to smooth the surface.
  5. Drizzle olive oil over the meat mixture and use a fork to create shallow lines on the surface for better cooking.
  6. Bake in the preheated oven for 25-30 minutes or until the meat is cooked through and slightly browned on the edges.
  7. While the meat is baking, prepare the tahini sauce by whisking together tahini, lemon juice, and water in a small bowl until smooth.
  8. Once the meat is done, remove it from the oven and let it rest for 5 minutes before slicing into burger-sized pieces.
  9. Serve warm with tahini sauce on the side.
