Ingredients

  • Lamb shoulder - 300 grams, cubed

  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Cherry tomatoes - 100 grams
  • Bell pepper - 1, cut into chunks
  • Red onion - 1 small, cut into chunks

Steps

  1. In a large bowl, combine olive oil, minced garlic, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  2. Add the cubed lamb to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  3. Soak skewers in water for 30 minutes if using wooden skewers to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated lamb, cherry tomatoes, bell pepper, and red onion onto the skewers alternately.
  6. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  7. Remove from the grill and let rest for a few minutes before serving. Garnish with chopped fresh parsley.
