- Cherry tomatoes - 100 grams
- Bell pepper - 1, cut into chunks
- Red onion - 1 small, cut into chunks
Steps
- In a large bowl, combine olive oil, minced garlic, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
- Add the cubed lamb to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
- Soak skewers in water for 30 minutes if using wooden skewers to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb, cherry tomatoes, bell pepper, and red onion onto the skewers alternately.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- Remove from the grill and let rest for a few minutes before serving. Garnish with chopped fresh parsley.
