Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, grated
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a large bowl, combine minced garlic, grated onion, olive oil, lemon juice, ground cumin, ground coriander, paprika, ground black pepper, and salt to create the marinade.
  2. Add the lamb cubes to the marinade and mix until evenly coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked wooden skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Once done, remove the skewers from the grill and let them rest for a few minutes. Garnish with chopped fresh parsley before serving.
