Lahm Bil Ajin

Ingredients

  • Ground lamb - 250 grams
  • Almond flour - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Tomato - 1 small, diced (for garnish)
  • Cucumber - 1 small, diced (for garnish)

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent.
  3. In a mixing bowl, combine the ground lamb, sautéed onion and garlic, paprika, cumin, cinnamon, salt, black pepper, beaten egg, and chopped parsley. Mix until well combined.
  4. In another bowl, combine almond flour, 1 tablespoon of olive oil, and a pinch of salt. Mix until it forms a dough-like consistency.
  5. Divide the almond flour mixture into two equal portions and flatten each into a round disc about 1 cm thick.
  6. Place the discs on a baking sheet and pre-bake in the grill for about 5 minutes until slightly firm.
  7. Remove the discs from the grill and spread the lamb mixture evenly on top of each disc.
  8. Return the Lahm Bil Ajin to the grill and cook for an additional 10-12 minutes, or until the lamb is cooked through and slightly charred.
  9. Once cooked, remove from the grill and let rest for a couple of minutes.
  10. Garnish with diced tomatoes and cucumbers, then drizzle with fresh lemon juice before serving.
