Ingredients

  • All-purpose flour - 250 grams
  • Water - 150 ml
  • Active dry yeast - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Parsley - 15 grams, finely chopped
  • Pine nuts - 30 grams, toasted
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sumac - 1 teaspoon

Steps

  1. In a bowl, mix the flour, warm water, yeast, and salt until a dough forms. Knead in the olive oil and continue kneading for about 5-7 minutes until smooth.
  2. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes or until doubled in size.
  3. In a skillet over medium heat, sauté the chopped onion until translucent. Add the ground meat and cook until browned, breaking it apart with a spatula.
  4. Stir in the chopped tomato, parsley, pine nuts, cinnamon, allspice, salt, black pepper, and sumac. Cook for another 5 minutes until the mixture is well combined and heated through. Remove from heat and let cool slightly.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, divide it into 2 equal portions. Roll each portion into a circle about 20 cm in diameter on a floured surface.
  7. Spread the meat mixture evenly over each dough circle, leaving a small border around the edges.
  8. Place the topped dough on a baking sheet and bake in the preheated oven for about 10-12 minutes or until the edges are golden and crispy.
  9. Remove from the oven, let cool for a few minutes, slice, and serve warm.
