  • all-purpose flour - 200 grams
  • warm water - 100 ml
  • olive oil - 2 tablespoons
  • salt - 1 teaspoon
  • ground lamb or beef - 250 grams
  • onion, finely chopped - 1 medium
  • garlic, minced - 2 cloves
  • tomato paste - 2 tablespoons
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • red pepper flakes - 1 teaspoon
  • fresh parsley, chopped - 2 tablespoons
  • lemon juice - 1 tablespoon
  • black pepper - 1/2 teaspoon

Steps

  1. In a bowl, combine the flour, warm water, olive oil, and salt. Knead until a smooth dough forms, then cover and let it rest for 15 minutes.
  2. In a skillet over medium heat, sauté the chopped onion and garlic until translucent.
  3. Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon.
  4. Stir in the tomato paste, ground cumin, ground coriander, red pepper flakes, black pepper, and salt. Cook for 5 minutes until well combined and flavorful.
  5. Remove from heat and mix in the chopped parsley and lemon juice. Allow the mixture to cool slightly.
  6. Preheat the oven to 220°C (428°F).
  7. Divide the dough into two equal portions and roll each out on a floured surface to a thin circle (about 25 cm in diameter).
  8. Place the rolled dough onto a baking sheet lined with parchment paper.
  9. Spread the meat mixture evenly over each dough circle, leaving a small border around the edges.
  10. Bake in the preheated oven for 15-20 minutes or until the edges are golden and the meat is cooked through.
  11. Remove from the oven and let it cool for a few minutes before slicing and serving.
