- all-purpose flour - 200 grams
- warm water - 100 ml
- olive oil - 2 tablespoons
- salt - 1 teaspoon
- ground lamb or beef - 250 grams
- onion, finely chopped - 1 medium
- garlic, minced - 2 cloves
- tomato paste - 2 tablespoons
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- red pepper flakes - 1 teaspoon
- fresh parsley, chopped - 2 tablespoons
- lemon juice - 1 tablespoon
- black pepper - 1/2 teaspoon
Steps
- In a bowl, combine the flour, warm water, olive oil, and salt. Knead until a smooth dough forms, then cover and let it rest for 15 minutes.
- In a skillet over medium heat, sauté the chopped onion and garlic until translucent.
- Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in the tomato paste, ground cumin, ground coriander, red pepper flakes, black pepper, and salt. Cook for 5 minutes until well combined and flavorful.
- Remove from heat and mix in the chopped parsley and lemon juice. Allow the mixture to cool slightly.
- Preheat the oven to 220°C (428°F).
- Divide the dough into two equal portions and roll each out on a floured surface to a thin circle (about 25 cm in diameter).
- Place the rolled dough onto a baking sheet lined with parchment paper.
- Spread the meat mixture evenly over each dough circle, leaving a small border around the edges.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden and the meat is cooked through.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
