Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 small, finely chopped
  • Paprika - 5 grams
  • Cinnamon - 1 gram
  • Allspice - 1 gram
  • Black pepper - 1 gram
  • Fresh parsley - 15 grams, chopped
  • Pine nuts - 15 grams, toasted (optional)
  • Lemon - 1, cut into wedges for serving

Steps

  1. In a bowl, combine warm water and yeast; let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt; make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 8-10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the topping. In a skillet over medium heat, sauté the chopped onion and garlic in olive oil until translucent.
  5. Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned.
  6. Stir in the chopped tomato, paprika, cinnamon, allspice, black pepper, and salt; cook for an additional 5 minutes. Remove from heat and mix in chopped parsley and toasted pine nuts if using.
  7. Preheat your oven to 220°C (428°F).
  8. Once the dough has risen, divide it into 2 equal portions. Roll each portion into a flat circle about 0.5 cm thick.
  9. Transfer the rolled dough onto a baking sheet lined with parchment paper. Spread the meat mixture evenly over each flatbread.
  10. Bake in the preheated oven for 12-15 minutes until the edges are golden and the meat is cooked through.
  11. Serve hot with lemon wedges on the side.
