- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Ground lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 small, finely chopped
- Paprika - 5 grams
- Cinnamon - 1 gram
- Allspice - 1 gram
- Black pepper - 1 gram
- Fresh parsley - 15 grams, chopped
- Pine nuts - 15 grams, toasted (optional)
- Lemon - 1, cut into wedges for serving
Steps
- In a bowl, combine warm water and yeast; let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt; make a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 8-10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the topping. In a skillet over medium heat, sauté the chopped onion and garlic in olive oil until translucent.
- Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned.
- Stir in the chopped tomato, paprika, cinnamon, allspice, black pepper, and salt; cook for an additional 5 minutes. Remove from heat and mix in chopped parsley and toasted pine nuts if using.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into 2 equal portions. Roll each portion into a flat circle about 0.5 cm thick.
- Transfer the rolled dough onto a baking sheet lined with parchment paper. Spread the meat mixture evenly over each flatbread.
- Bake in the preheated oven for 12-15 minutes until the edges are golden and the meat is cooked through.
- Serve hot with lemon wedges on the side.
