- Pizza dough - 250 grams
- Labneh - 200 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
- Red onion - 1 small, thinly sliced
- Olive oil - 2 tablespoons
- Za'atar spice - 1 tablespoon
- Fresh mint leaves - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- On a floured surface, roll out the pizza dough to your desired thickness, about 1 cm thick.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Spread the labneh evenly over the surface of the dough, leaving a small border around the edges.
- In a bowl, combine the cherry tomatoes, diced cucumber, and sliced red onion. Drizzle with olive oil, and season with salt and black pepper to taste.
- Spread the vegetable mixture evenly over the labneh layer.
- Sprinkle the za'atar spice over the top of the pizza.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
- Once baked, remove from the oven and let it cool slightly.
- Garnish with fresh mint leaves before slicing and serving.
