Ingredients
- Chicken breast - 300 grams
- Plain yogurt - 200 grams
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Rice (long-grain) - 150 grams
- Water - 300 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a bowl, mix the yogurt, minced garlic, salt, black pepper, and ground cumin. Add the chicken breast pieces and marinate for at least 15 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the marinated chicken to the skillet and cook until browned on all sides, about 7-10 minutes.
- Pour in the remaining marinade and reduce the heat to low. Cover and simmer for 15 minutes, allowing the chicken to cook through and the sauce to thicken.
- While the chicken is cooking, rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water with a pinch of salt and bring to a boil.
- Once boiling, reduce the heat to low, cover, and cook for 15 minutes or until the rice is tender and water is absorbed.
- Serve the chicken with the yogurt sauce over the rice, garnished with chopped parsley.
