Ingredients
- Zucchini - 2 medium
- Cauliflower rice - 200 grams
- Ground beef (or lamb) - 150 grams
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Tomato - 1 medium, diced
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Cut the ends off the zucchini and scoop out the insides using a small spoon, creating a hollow center. Set aside the zucchini flesh for later use.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes, stirring occasionally.
- Add the minced garlic, chopped red onion, paprika, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes until the onion is translucent.
- Stir in the cauliflower rice and the reserved zucchini flesh, mixing well. Cook for another 5 minutes until the cauliflower rice is tender. Remove from heat and let cool slightly.
- In a large bowl, combine the cooked mixture with chopped parsley, mint, and diced tomato. Drizzle with lemon juice and the remaining olive oil. Toss well to combine.
- Serve chilled or at room temperature, garnished with additional parsley and mint if desired.
