Ingredients

  • Zucchini - 2 medium
  • Cauliflower rice - 200 grams
  • Ground beef (or lamb) - 150 grams
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Tomato - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Cut the ends off the zucchini and scoop out the insides using a small spoon, creating a hollow center. Set aside the zucchini flesh for later use.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes, stirring occasionally.
  3. Add the minced garlic, chopped red onion, paprika, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes until the onion is translucent.
  4. Stir in the cauliflower rice and the reserved zucchini flesh, mixing well. Cook for another 5 minutes until the cauliflower rice is tender. Remove from heat and let cool slightly.
  5. In a large bowl, combine the cooked mixture with chopped parsley, mint, and diced tomato. Drizzle with lemon juice and the remaining olive oil. Toss well to combine.
  6. Serve chilled or at room temperature, garnished with additional parsley and mint if desired.
