Ingredients

  • Zucchini - 2 medium-sized
  • Coconut cream - 200 ml
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Almond flour - 50 grams
  • Pistachios, chopped - 30 grams
  • Salt - a pinch

Steps

  1. Begin by slicing the tops off the zucchinis and hollowing them out carefully using a small spoon or a zucchini corer, leaving about 1 cm of flesh on the sides.
  2. In a bowl, combine the coconut cream, honey, vanilla extract, cinnamon, almond flour, and a pinch of salt. Mix well until smooth.
  3. Stuff each hollowed zucchini with the ashta filling, pressing gently to pack it in.
  4. Place the stuffed zucchinis upright in a steamer basket, cover, and steam over boiling water for about 25-30 minutes or until the zucchinis are tender.
  5. Once cooked, remove from heat and allow to cool slightly before serving.
  6. Top each stuffed zucchini with chopped pistachios for added crunch and garnish, then drizzle with a little extra honey if desired.
