- Zucchini - 2 medium-sized
- Coconut cream - 200 ml
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Almond flour - 50 grams
- Pistachios, chopped - 30 grams
- Salt - a pinch
Steps
- Begin by slicing the tops off the zucchinis and hollowing them out carefully using a small spoon or a zucchini corer, leaving about 1 cm of flesh on the sides.
- In a bowl, combine the coconut cream, honey, vanilla extract, cinnamon, almond flour, and a pinch of salt. Mix well until smooth.
- Stuff each hollowed zucchini with the ashta filling, pressing gently to pack it in.
- Place the stuffed zucchinis upright in a steamer basket, cover, and steam over boiling water for about 25-30 minutes or until the zucchinis are tender.
- Once cooked, remove from heat and allow to cool slightly before serving.
- Top each stuffed zucchini with chopped pistachios for added crunch and garnish, then drizzle with a little extra honey if desired.
