Ingredients

  • Ground lamb or beef - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almond flour - 100 grams
  • Egg - 1 large
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams, shredded
  • Bell pepper - 1/2, sliced
  • Olives - 10, pitted and sliced
  • Feta cheese - 30 grams, crumbled
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine ground meat, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well until fully combined.
  3. Add almond flour and the egg to the meat mixture and mix until a dough-like consistency forms.
  4. Line a baking tray with parchment paper and spread the meat mixture evenly into a round pizza shape, about 1 cm thick.
  5. Bake the kofta crust in the preheated oven for 15 minutes until slightly firm and browned.
  6. Remove the crust from the oven and spread the tomato sauce evenly over the surface.
  7. Sprinkle the shredded mozzarella cheese over the sauce, then top with sliced bell pepper, olives, and crumbled feta cheese.
  8. Drizzle olive oil over the toppings and return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, let cool slightly, and slice into wedges to serve.
