- Ground beef (or lamb) - 300 grams
- Onion, finely grated - 1 small (about 50 grams)
- Garlic, minced - 2 cloves
- Parsley, chopped - 2 tablespoons
- Cilantro, chopped - 2 tablespoons
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Pita bread - 2 pieces
- Tomato, sliced - 1 medium
- Cucumber, sliced - 1 small
- Tahini - 4 tablespoons
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
Steps
- In a bowl, combine the ground meat, grated onion, minced garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and paprika. Mix well until all ingredients are thoroughly combined.
- Shape the mixture into two equal-sized patties, about 1.5 cm thick.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are browned and cooked through.
- While the patties are cooking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add a little water to reach desired consistency; season with salt to taste.
- Warm the pita bread in a dry skillet or on a grill for about 1 minute on each side.
- To assemble, place each kofta patty in a pita pocket, then top with sliced tomato, cucumber, and a generous drizzle of tahini sauce.
