Ingredients

  • Ground beef (or lamb) - 300 grams
  • Onion, finely grated - 1 small (about 50 grams)
  • Garlic, minced - 2 cloves
  • Parsley, chopped - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Pita bread - 2 pieces
  • Tomato, sliced - 1 medium
  • Cucumber, sliced - 1 small
  • Tahini - 4 tablespoons
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, combine the ground meat, grated onion, minced garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and paprika. Mix well until all ingredients are thoroughly combined.
  2. Shape the mixture into two equal-sized patties, about 1.5 cm thick.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are browned and cooked through.
  4. While the patties are cooking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add a little water to reach desired consistency; season with salt to taste.
  5. Warm the pita bread in a dry skillet or on a grill for about 1 minute on each side.
  6. To assemble, place each kofta patty in a pita pocket, then top with sliced tomato, cucumber, and a generous drizzle of tahini sauce.
