Ingredients
- Ground lamb - 200 grams
- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 400 grams
- Cauliflower rice - 200 grams (to serve as a base)
Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine the ground lamb, ground beef, chopped onion, minced garlic, parsley, cumin, cinnamon, salt, and black pepper. Mix until well combined.
- Shape the meat mixture into small meatballs, about 4 cm in diameter.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and sear them on all sides until browned, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the tomato paste, cooking for 1 minute. Then add the diced tomatoes, stirring well to combine. Let the sauce simmer for 5 minutes.
- Place the seared meatballs into a baking dish and pour the tomato sauce over them, ensuring they are well covered.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- While the meatballs are baking, prepare the cauliflower rice by steaming it or sautéing it in a separate skillet for about 5-7 minutes until tender.
- Once the meatballs are done, remove them from the oven and let them cool slightly before serving them over the cauliflower rice.
