Ingredients

  • Ground lamb - 200 grams
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Cauliflower rice - 200 grams (to serve as a base)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the ground lamb, ground beef, chopped onion, minced garlic, parsley, cumin, cinnamon, salt, and black pepper. Mix until well combined.
  3. Shape the meat mixture into small meatballs, about 4 cm in diameter.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and sear them on all sides until browned, about 5-7 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of olive oil and the tomato paste, cooking for 1 minute. Then add the diced tomatoes, stirring well to combine. Let the sauce simmer for 5 minutes.
  6. Place the seared meatballs into a baking dish and pour the tomato sauce over them, ensuring they are well covered.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. While the meatballs are baking, prepare the cauliflower rice by steaming it or sautéing it in a separate skillet for about 5-7 minutes until tender.
  9. Once the meatballs are done, remove them from the oven and let them cool slightly before serving them over the cauliflower rice.
