- Ricotta cheese - 200 grams
- Semolina - 50 grams
- All-purpose flour - 50 grams
- Sugar - 30 grams
- Baking powder - 1 teaspoon
- Ground cardamom - 1/2 teaspoon
- Butter - 30 grams, melted
- Egg - 1 large
- Rose water - 1 tablespoon
- Pistachios - 30 grams, crushed (for garnish)
Steps
- In a mixing bowl, combine the ricotta cheese, semolina, all-purpose flour, sugar, baking powder, ground cardamom, melted butter, egg, and rose water. Mix until a smooth dough forms.
- Cover the dough with a damp cloth and let it rest for 10 minutes to allow the semolina to absorb moisture.
- Preheat your oven to 180°C (350°F).
- Take small portions of the dough and flatten them into discs. Place a teaspoon of ricotta cheese in the center of each disc, then fold the edges over to seal and form a ball.
- Arrange the prepared kofta on a baking sheet lined with parchment paper, making sure they are spaced apart.
- Bake in the preheated oven for 15-20 minutes, or until the kofta are golden brown.
- Remove from the oven and let them cool slightly before serving. Garnish with crushed pistachios before enjoying.
