Ingredients

  • Ricotta cheese - 200 grams
  • Semolina - 50 grams
  • All-purpose flour - 50 grams
  • Sugar - 30 grams
  • Baking powder - 1 teaspoon
  • Ground cardamom - 1/2 teaspoon
  • Butter - 30 grams, melted
  • Egg - 1 large
  • Rose water - 1 tablespoon
  • Pistachios - 30 grams, crushed (for garnish)

Steps

  1. In a mixing bowl, combine the ricotta cheese, semolina, all-purpose flour, sugar, baking powder, ground cardamom, melted butter, egg, and rose water. Mix until a smooth dough forms.
  2. Cover the dough with a damp cloth and let it rest for 10 minutes to allow the semolina to absorb moisture.
  3. Preheat your oven to 180°C (350°F).
  4. Take small portions of the dough and flatten them into discs. Place a teaspoon of ricotta cheese in the center of each disc, then fold the edges over to seal and form a ball.
  5. Arrange the prepared kofta on a baking sheet lined with parchment paper, making sure they are spaced apart.
  6. Bake in the preheated oven for 15-20 minutes, or until the kofta are golden brown.
  7. Remove from the oven and let them cool slightly before serving. Garnish with crushed pistachios before enjoying.
