- Semolina - 50 grams
- Brown sugar - 50 grams
- Ground cinnamon - 1 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - a pinch
- Vanilla extract - 1 teaspoon
- Chopped walnuts - 30 grams
- Olive oil - for frying
- Powdered sugar - for dusting
Steps
- Peel and chop the sweet potatoes into chunks and boil them in a pot of water until tender, about 15-20 minutes.
- Drain the sweet potatoes and mash them in a bowl until smooth.
- Add semolina, brown sugar, ground cinnamon, ground nutmeg, baking powder, salt, and vanilla extract to the mashed sweet potatoes. Mix well until all ingredients are combined.
- Fold in the chopped walnuts gently into the mixture.
- Heat olive oil in a frying pan over medium heat.
- Shape the sweet potato mixture into oval or round patties, about 1 cm thick.
- Fry the patties in the hot oil until golden brown on both sides, approximately 3-4 minutes per side.
- Once cooked, remove the patties from the oil and place them on paper towels to absorb excess oil.
