Ingredients

  • Sweet potatoes - 300 grams
  • Semolina - 50 grams
  • Brown sugar - 50 grams
  • Ground cinnamon - 1 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch
  • Vanilla extract - 1 teaspoon
  • Chopped walnuts - 30 grams
  • Olive oil - for frying
  • Powdered sugar - for dusting

Steps

  1. Peel and chop the sweet potatoes into chunks and boil them in a pot of water until tender, about 15-20 minutes.
  2. Drain the sweet potatoes and mash them in a bowl until smooth.
  3. Add semolina, brown sugar, ground cinnamon, ground nutmeg, baking powder, salt, and vanilla extract to the mashed sweet potatoes. Mix well until all ingredients are combined.
  4. Fold in the chopped walnuts gently into the mixture.
  5. Heat olive oil in a frying pan over medium heat.
  6. Shape the sweet potato mixture into oval or round patties, about 1 cm thick.
  7. Fry the patties in the hot oil until golden brown on both sides, approximately 3-4 minutes per side.
  8. Once cooked, remove the patties from the oil and place them on paper towels to absorb excess oil.
  9. Dust with powdered sugar before serving.
