Ingredients

  • Knafeh dough - 200 grams
  • Unsalted mozzarella cheese - 100 grams
  • Unsalted ricotta cheese - 100 grams
  • Unsalted butter - 50 grams, melted
  • Sugar - 100 grams
  • Water - 100 ml
  • Rose water - 1 tablespoon
  • Pistachios - 30 grams, crushed
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, combine sugar and water to make the syrup. Heat until the sugar dissolves, then add rose water and simmer for 10 minutes. Set aside to cool.
  3. In a mixing bowl, combine the mozzarella and ricotta cheese with a pinch of salt. Mix until well combined.
  4. Take the Knafeh dough and shred it into small pieces if not already shredded. Mix the shredded dough with melted butter until fully coated.
  5. In a baking dish, spread half of the buttered Knafeh dough evenly at the bottom, pressing down gently.
  6. Spread the cheese mixture over the dough layer evenly.
  7. Top with the remaining Knafeh dough, pressing down gently again to ensure it holds together.
  8. Bake in the preheated oven for about 30 minutes, or until golden brown on top.
  9. Once baked, remove from the oven and immediately drizzle the cooled syrup over the hot Knafeh.
  10. Let it sit for about 10 minutes before serving, then garnish with crushed pistachios.
