Ingredients

  • Almond flour - 100g
  • Butter - 50g, melted
  • Erythritol - 30g
  • Eggs - 2 large
  • Ricotta cheese - 100g
  • Rose water - 1 tsp
  • Cardamom powder - 1/2 tsp
  • Pistachios, crushed - 20g (for topping)
  • Cinnamon powder - 1/2 tsp

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted butter, and erythritol until well mixed.
  3. Add the eggs one at a time, mixing well after each addition until the batter is smooth.
  4. In another bowl, mix the ricotta cheese, rose water, cardamom powder, and cinnamon powder until well combined.
  5. Grease a small baking dish with butter, and spread half of the almond flour mixture evenly at the bottom.
  6. Spread the ricotta mixture over the almond base evenly.
  7. Top with the remaining almond flour mixture, smoothing the surface with a spatula.
  8. Sprinkle the crushed pistachios on top for added crunch.
  9. Bake in the preheated oven for 20-25 minutes or until the top is golden brown.
  10. Remove from the oven and let cool for a few minutes before slicing and serving.
