Ingredients
- Almond flour - 100g
- Butter - 50g, melted
- Erythritol - 30g
- Eggs - 2 large
- Ricotta cheese - 100g
- Rose water - 1 tsp
- Cardamom powder - 1/2 tsp
- Pistachios, crushed - 20g (for topping)
- Cinnamon powder - 1/2 tsp
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, melted butter, and erythritol until well mixed.
- Add the eggs one at a time, mixing well after each addition until the batter is smooth.
- In another bowl, mix the ricotta cheese, rose water, cardamom powder, and cinnamon powder until well combined.
- Grease a small baking dish with butter, and spread half of the almond flour mixture evenly at the bottom.
- Spread the ricotta mixture over the almond base evenly.
- Top with the remaining almond flour mixture, smoothing the surface with a spatula.
- Sprinkle the crushed pistachios on top for added crunch.
- Bake in the preheated oven for 20-25 minutes or until the top is golden brown.
- Remove from the oven and let cool for a few minutes before slicing and serving.
