Ingredients

  • Knafeh dough - 200 grams
  • Unsalted cheese (like Akkawi or mozzarella) - 150 grams
  • Greek yogurt - 100 grams
  • Unsalted butter - 50 grams, melted
  • Sugar - 50 grams
  • Water - 100 ml
  • Orange blossom water - 1 tablespoon
  • Pistachios, crushed - 30 grams for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pot, combine the sugar and water over medium heat, stirring until sugar is dissolved. Add the orange blossom water and bring to a boil for 2-3 minutes, then remove from heat and let cool.
  3. Shred the Knafeh dough into fine pieces and mix with the melted butter until evenly coated.
  4. In a greased 20cm (8-inch) round baking dish, press half of the dough mixture evenly on the bottom.
  5. Slice the cheese into thin strips and layer it over the dough base. Spread the Greek yogurt evenly on top of the cheese.
  6. Cover the filling with the remaining dough mixture, pressing gently to compact it.
  7. Bake in the preheated oven for 25-30 minutes or until golden brown on top.
  8. Once baked, immediately pour the cooled syrup over the hot Knafeh, ensuring it's well soaked.
  9. Let it sit for 5-10 minutes before cutting into slices. Garnish with crushed pistachios before serving.
