- Fine semolina - 100 grams
- Vegan butter - 50 grams, melted
- Almond milk - 200 milliliters
- Cornstarch - 30 grams
- Coconut cream - 100 grams
- Sugar - 50 grams
- Rose water - 1 tablespoon
- Pistachios - 20 grams, crushed
- Date syrup - for drizzling
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the fine semolina and melted vegan butter, mixing until the semolina is fully coated.
- Press half of the semolina mixture into the bottom of a greased 20 cm (8-inch) baking dish to form the base layer.
- In a saucepan over medium heat, whisk together the almond milk, cornstarch, coconut cream, and sugar until the mixture thickens and becomes creamy, about 10 minutes.
- Remove the saucepan from heat and stir in the rose water.
- Pour the creamy mixture over the semolina base in the baking dish, spreading it evenly.
- Top with the remaining semolina mixture, pressing down gently to create an even surface.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing.
- Drizzle with date syrup and sprinkle with crushed pistachios before serving.
