Ingredients

  • Fine semolina - 100 grams
  • Vegan butter - 50 grams, melted
  • Almond milk - 200 milliliters
  • Cornstarch - 30 grams
  • Coconut cream - 100 grams
  • Sugar - 50 grams
  • Rose water - 1 tablespoon
  • Pistachios - 20 grams, crushed
  • Date syrup - for drizzling

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the fine semolina and melted vegan butter, mixing until the semolina is fully coated.
  3. Press half of the semolina mixture into the bottom of a greased 20 cm (8-inch) baking dish to form the base layer.
  4. In a saucepan over medium heat, whisk together the almond milk, cornstarch, coconut cream, and sugar until the mixture thickens and becomes creamy, about 10 minutes.
  5. Remove the saucepan from heat and stir in the rose water.
  6. Pour the creamy mixture over the semolina base in the baking dish, spreading it evenly.
  7. Top with the remaining semolina mixture, pressing down gently to create an even surface.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  9. Remove from the oven and let it cool for a few minutes before slicing.
  10. Drizzle with date syrup and sprinkle with crushed pistachios before serving.
