Ingredients

  • Fine semolina - 100 grams
  • Unsalted butter - 50 grams, melted
  • Water - 200 ml
  • Sugar - 50 grams
  • Rose water - 1 tablespoon
  • Pistachios - 30 grams, chopped
  • Ricotta cheese - 100 grams
  • Sugar - 30 grams (for filling)
  • Milk - 100 ml
  • Cardamom powder - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine fine semolina and melted butter until well mixed. Spread the mixture evenly in a greased baking dish, pressing it down firmly.
  3. In a separate bowl, mix ricotta cheese, 30 grams of sugar, milk, and cardamom powder until smooth. Spread this filling over the semolina layer.
  4. Top with another layer of the semolina mixture, pressing down gently. Bake in the preheated oven for 30 minutes or until golden brown.
  5. While baking, prepare the syrup by combining water, 50 grams of sugar, and rose water in a saucepan. Bring to a boil, then simmer for 10 minutes until slightly thickened.
  6. Once the Knafeh is done baking, remove it from the oven and immediately drizzle with the rose water syrup. Let it sit for 5 minutes.
  7. Garnish with chopped pistachios before serving.
