Ingredients
- Almond flour - 100 grams
- Unsalted butter - 50 grams, melted
- Ricotta cheese - 100 grams
- Mozzarella cheese - 100 grams, shredded
- Egg - 1 large
- Erythritol or any sugar substitute - 30 grams
- Rose water - 1 teaspoon
- Pistachios - 20 grams, chopped (for garnish)
- Water - 100 milliliters
- Cinnamon - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour and melted butter until well mixed.
- Press the almond flour mixture into the bottom of a small baking dish (approximately 20x20 cm) to form the base.
- In another bowl, mix together ricotta cheese, shredded mozzarella, egg, and erythritol until smooth.
- Spread the cheese mixture evenly over the almond flour base.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- While the knafeh is baking, prepare the syrup by combining water, erythritol, and cinnamon in a small saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes until slightly thickened.
- Once the knafeh is done, remove it from the oven and immediately drizzle the syrup over the top.
- Garnish with chopped pistachios before serving.
