Ingredients

  • Fine semolina - 100 grams
  • Unsalted butter - 50 grams, melted
  • Kiri cheese - 100 grams, softened
  • Greek yogurt - 50 grams
  • Sugar - 50 grams
  • Water - 100 milliliters
  • Pistachios - 30 grams, crushed
  • Rose water - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix the fine semolina with melted butter until well combined and the semolina is fully coated.
  3. In a separate bowl, blend the Kiri cheese, Greek yogurt, vanilla extract, and a pinch of salt until smooth and creamy.
  4. In a small saucepan, combine sugar and water to make the syrup. Bring to a boil, then reduce heat and simmer for about 5 minutes. Stir in rose water and remove from heat.
  5. In a greased baking dish (about 20x20 cm), spread half of the semolina mixture evenly at the bottom.
  6. Layer the Kiri cheese mixture on top of the semolina base, spreading it evenly.
  7. Top with the remaining semolina mixture, pressing down gently to compact it.
  8. Bake in the preheated oven for 20-25 minutes, until the top is golden brown.
  9. Remove from the oven and pour the warm sugar syrup evenly over the baked knafeh.
  10. Let it sit for a few minutes before serving, and garnish with crushed pistachios.
