- Fine semolina - 100 grams
- Unsalted butter - 50 grams, melted
- Kiri cheese - 100 grams, softened
- Greek yogurt - 50 grams
- Sugar - 50 grams
- Water - 100 milliliters
- Pistachios - 30 grams, crushed
- Rose water - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the fine semolina with melted butter until well combined and the semolina is fully coated.
- In a separate bowl, blend the Kiri cheese, Greek yogurt, vanilla extract, and a pinch of salt until smooth and creamy.
- In a small saucepan, combine sugar and water to make the syrup. Bring to a boil, then reduce heat and simmer for about 5 minutes. Stir in rose water and remove from heat.
- In a greased baking dish (about 20x20 cm), spread half of the semolina mixture evenly at the bottom.
- Layer the Kiri cheese mixture on top of the semolina base, spreading it evenly.
- Top with the remaining semolina mixture, pressing down gently to compact it.
- Bake in the preheated oven for 20-25 minutes, until the top is golden brown.
- Remove from the oven and pour the warm sugar syrup evenly over the baked knafeh.
- Let it sit for a few minutes before serving, and garnish with crushed pistachios.
