Ingredients

  • kataifi pastry - 100 grams
  • unsalted butter - 50 grams, melted
  • milk - 200 ml
  • heavy cream - 100 ml
  • cornstarch - 20 grams
  • sugar - 50 grams
  • vanilla extract - 1 teaspoon
  • rose water - 1 teaspoon
  • pistachios - 30 grams, chopped
  • honey - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine the kataifi pastry with melted butter and mix well to coat the strands evenly.
  3. Spread half of the buttered kataifi pastry evenly in the bottom of a baking dish to form a base layer.
  4. In a saucepan, combine milk, heavy cream, cornstarch, sugar, and vanilla extract. Cook over medium heat, stirring constantly until the mixture thickens to a custard-like consistency.
  5. Remove from heat and stir in the rose water. Allow the ashta mixture to cool slightly.
  6. Pour the ashta mixture over the kataifi base in the baking dish, spreading it evenly.
  7. Top with the remaining kataifi pastry, pressing down gently to secure the layers.
  8. Bake in the preheated oven for about 25-30 minutes or until the top is golden brown.
  9. Remove from the oven and let it cool for a few minutes before drizzling with honey and sprinkling with chopped pistachios.
  10. Serve warm or at room temperature.
