Ingredients

  • Whole wheat kataifi pastry - 100 grams
  • Low-fat cottage cheese - 150 grams
  • Greek yogurt - 50 grams
  • Honey - 2 tablespoons
  • Unsalted butter - 25 grams, melted
  • Pistachios, crushed - 2 tablespoons
  • Rose water - 1 teaspoon
  • Orange blossom water - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Fresh mint leaves for garnish - a few sprigs

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the low-fat cottage cheese, Greek yogurt, honey, rose water, orange blossom water, and cinnamon powder. Mix well until smooth.
  3. Take the kataifi pastry and separate the strands. In a bowl, drizzle the melted butter over the pastry and toss to coat thoroughly.
  4. Spread half of the buttered kataifi pastry evenly in a greased baking dish, pressing down gently to form a base.
  5. Layer the cheese mixture over the kataifi base evenly.
  6. Top with the remaining half of the buttered kataifi pastry, spreading it evenly over the cheese layer.
  7. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and crispy.
  8. Remove from the oven and let it cool for a few minutes before slicing into squares.
