- Fine bulgur wheat - 100 grams
- Lean ground lamb or beef - 150 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Ground cinnamon - 1/2 teaspoon
- Ground allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Greek yogurt - 200 grams
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
Steps
- Soak the bulgur wheat in water for about 30 minutes until it softens, then drain and squeeze out excess water.
- In a large bowl, combine the soaked bulgur, ground meat, chopped onion, toasted pine nuts, cinnamon, allspice, salt, pepper, and parsley. Mix well until all ingredients are fully incorporated.
- Preheat the oven to 180°C (350°F). Shape the mixture into oval patties or balls (about 8-10 pieces) and place them on a baking sheet lined with parchment paper.
- Drizzle the olive oil over the kibbeh and bake for about 20-25 minutes until cooked through and slightly golden.
- While the kibbeh is baking, prepare the yogurt sauce by mixing the Greek yogurt with minced garlic and a pinch of salt in a bowl.
- Serve the kibbeh warm topped with the yogurt sauce.
