Ingredients

  • Fine bulgur wheat - 100 grams
  • Lean ground lamb or beef - 150 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Ground cinnamon - 1/2 teaspoon
  • Ground allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Greek yogurt - 200 grams
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon

Steps

  1. Soak the bulgur wheat in water for about 30 minutes until it softens, then drain and squeeze out excess water.
  2. In a large bowl, combine the soaked bulgur, ground meat, chopped onion, toasted pine nuts, cinnamon, allspice, salt, pepper, and parsley. Mix well until all ingredients are fully incorporated.
  3. Preheat the oven to 180°C (350°F). Shape the mixture into oval patties or balls (about 8-10 pieces) and place them on a baking sheet lined with parchment paper.
  4. Drizzle the olive oil over the kibbeh and bake for about 20-25 minutes until cooked through and slightly golden.
  5. While the kibbeh is baking, prepare the yogurt sauce by mixing the Greek yogurt with minced garlic and a pinch of salt in a bowl.
  6. Serve the kibbeh warm topped with the yogurt sauce.
