Ingredients
- Cauliflower - 300 grams, grated
- Ground beef or lamb - 200 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Cinnamon - 1 teaspoon
- Allspice - 1 teaspoon
- Salt - ½ teaspoon
- Black pepper - ½ teaspoon
- Parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Grate the cauliflower using a food processor or a box grater until it resembles rice or couscous.
- Spread the grated cauliflower on a baking sheet, drizzle with 1 tablespoon of olive oil, and roast in the oven for 20 minutes, stirring halfway through.
- In a skillet, heat the remaining olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the ground beef or lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the toasted pine nuts, cinnamon, allspice, salt, and black pepper. Cook for another 2 minutes to combine flavors.
- Remove the roasted cauliflower from the oven and add it to the meat mixture. Stir in the chopped parsley and lemon juice, mixing well.
- Transfer the mixture to a serving dish and serve warm.
