Ingredients

  • Fine bulgur wheat - 100 grams
  • Ground lamb or beef - 250 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Ground cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 200 milliliters
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Soak the fine bulgur wheat in 200 milliliters of water for about 30 minutes until it absorbs the water and softens.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until translucent.
  4. Add the ground meat to the skillet and cook until browned, stirring frequently. Mix in the ground cinnamon, allspice, salt, and black pepper.
  5. Once cooked, stir in the toasted pine nuts and chopped parsley, then remove from heat.
  6. In a large bowl, combine the soaked bulgur wheat with the cooked meat mixture, mixing well until fully combined.
  7. Grease a baking dish with the remaining tablespoon of olive oil. Press half of the kibbeh mixture evenly into the bottom of the dish to form a base.
  8. Spread the meat mixture evenly over the base layer, then cover with the remaining kibbeh mixture, pressing down gently.
  9. Score the top layer with a knife into diamond shapes for easy serving, and drizzle a little olive oil over the top.
  10. Bake in the preheated oven for 30 minutes or until golden brown on top.
  11. Remove from the oven and let it cool for a few minutes before serving.
