Ingredients
- Fine bulgur wheat - 100 grams
- Ground lamb or beef - 250 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Ground cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 200 milliliters
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- Soak the fine bulgur wheat in 200 milliliters of water for about 30 minutes until it absorbs the water and softens.
- In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until translucent.
- Add the ground meat to the skillet and cook until browned, stirring frequently. Mix in the ground cinnamon, allspice, salt, and black pepper.
- Once cooked, stir in the toasted pine nuts and chopped parsley, then remove from heat.
- In a large bowl, combine the soaked bulgur wheat with the cooked meat mixture, mixing well until fully combined.
- Grease a baking dish with the remaining tablespoon of olive oil. Press half of the kibbeh mixture evenly into the bottom of the dish to form a base.
- Spread the meat mixture evenly over the base layer, then cover with the remaining kibbeh mixture, pressing down gently.
- Score the top layer with a knife into diamond shapes for easy serving, and drizzle a little olive oil over the top.
- Bake in the preheated oven for 30 minutes or until golden brown on top.
- Remove from the oven and let it cool for a few minutes before serving.
