Ingredients

  • Ground lamb - 300 grams
  • Almond flour - 150 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic cloves, minced - 2
  • Pine nuts - 50 grams
  • Cinnamon - 1 teaspoon
  • Allspice - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Egg - 1 large
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 5 minutes.
  3. Add the ground lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 8-10 minutes.
  4. Stir in the pine nuts, cinnamon, allspice, salt, black pepper, and parsley. Cook for another 2-3 minutes or until the pine nuts are slightly toasted. Remove from heat and let it cool slightly.
  5. In a bowl, combine almond flour, the remaining tablespoon of olive oil, egg, lemon juice, and a pinch of salt. Mix until a dough forms.
  6. On a sheet of parchment paper, spread the almond flour mixture into a rectangle, about 1 cm thick.
  7. Spread the cooled lamb mixture evenly over the almond flour layer, leaving a small border around the edges.
  8. Using the parchment paper to help, carefully roll the mixture into a log shape.
  9. Transfer the rolled kibbeh to a baking dish and brush the top with olive oil.
  10. Bake in the preheated oven for 30-35 minutes, or until golden brown.
  11. Let it cool slightly before slicing into rounds. Serve warm.
