Ingredients

  • Cauliflower - 1 medium head
  • Ground lamb or beef - 300 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 50 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Cinnamon - 1 teaspoon
  • Allspice - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon

Steps

  1. Begin by preparing the cauliflower pasta. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they reach a rice-like texture. Set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 8-10 minutes.
  5. Stir in the minced garlic, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes until fragrant.
  6. Add the toasted pine nuts and chopped parsley to the meat mixture, stirring to combine. Remove from heat and set aside.
  7. In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the processed cauliflower and sauté for about 5-7 minutes until tender.
  8. Drizzle lemon juice over the cauliflower and stir well.
