Ingredients
- Cauliflower - 1 medium head
- Ground lamb or beef - 300 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 50 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
- Cinnamon - 1 teaspoon
- Allspice - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
Steps
- Begin by preparing the cauliflower pasta. Remove the leaves and stem from the cauliflower and cut it into florets.
- In a food processor, pulse the cauliflower florets until they reach a rice-like texture. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 8-10 minutes.
- Stir in the minced garlic, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes until fragrant.
- Add the toasted pine nuts and chopped parsley to the meat mixture, stirring to combine. Remove from heat and set aside.
- In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the processed cauliflower and sauté for about 5-7 minutes until tender.
- Drizzle lemon juice over the cauliflower and stir well.
