Ingredients

  • Fine bulgur wheat - 100 grams
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Ground cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Yogurt - 100 grams, for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, soak the fine bulgur wheat in cold water for 30 minutes, then drain well.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  4. Add the ground meat to the skillet and cook until browned, breaking it up with a spoon, about 8 minutes.
  5. Stir in the toasted pine nuts, ground cinnamon, allspice, cumin, salt, and black pepper; cook for another 2 minutes and then remove from heat.
  6. In a large bowl, combine the soaked bulgur wheat with half of the meat mixture, mixing well until combined.
  7. Grease a baking dish with the remaining tablespoon of olive oil. Spread half of the bulgur mixture evenly across the bottom of the dish.
  8. Layer the remaining meat mixture on top of the bulgur base, then cover with the remaining bulgur mixture, pressing down gently.
  9. Score the top layer with a knife to create diamond shapes or squares for easy serving.
  10. Bake in the preheated oven for 30 minutes, or until the top is golden brown.
  11. Remove from the oven and let it rest for 10 minutes before serving. Serve warm with yogurt.
