Ingredients
- Fine bulgur wheat - 100 grams
- Ground lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Ground cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Yogurt - 100 grams, for serving
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, soak the fine bulgur wheat in cold water for 30 minutes, then drain well.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the ground meat to the skillet and cook until browned, breaking it up with a spoon, about 8 minutes.
- Stir in the toasted pine nuts, ground cinnamon, allspice, cumin, salt, and black pepper; cook for another 2 minutes and then remove from heat.
- In a large bowl, combine the soaked bulgur wheat with half of the meat mixture, mixing well until combined.
- Grease a baking dish with the remaining tablespoon of olive oil. Spread half of the bulgur mixture evenly across the bottom of the dish.
- Layer the remaining meat mixture on top of the bulgur base, then cover with the remaining bulgur mixture, pressing down gently.
- Score the top layer with a knife to create diamond shapes or squares for easy serving.
- Bake in the preheated oven for 30 minutes, or until the top is golden brown.
- Remove from the oven and let it rest for 10 minutes before serving. Serve warm with yogurt.
