Ingredients

  • Bulgur wheat - 150 grams
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Ground cinnamon - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 400 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the bulgur wheat in water for about 20 minutes or until soft, then drain well.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add the ground meat to the skillet and cook until browned, breaking it apart with a spatula.
  5. Stir in the toasted pine nuts, cinnamon, allspice, salt, and pepper, then cook for another 2 minutes before removing from heat.
  6. In a large bowl, combine the soaked bulgur, cooked meat mixture, and chopped parsley, mixing well.
  7. Transfer half of the bulgur mixture into a greased baking dish, flattening it out evenly.
  8. Spread the remaining bulgur mixture on top and smooth it out.
  9. Drizzle the remaining olive oil over the top and score the surface with a knife in a diamond pattern.
  10. Bake in the preheated oven for 30-35 minutes or until golden brown on top.
  11. Remove from the oven and allow to cool slightly before cutting into pieces and serving.
