Ingredients
- Almond flour - 150 grams
- Ground beef - 200 grams
- Ground lamb - 100 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Cinnamon - 1 teaspoon
- Allspice - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Egg - 1, beaten
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the ground beef and lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 8-10 minutes.
- Stir in the garlic, pine nuts, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes, then remove from heat and let cool slightly.
- In a bowl, combine the almond flour, beaten egg, and lemon juice. Mix until a dough forms, adjusting with a little water if necessary.
- Divide the dough into two equal parts. Flatten each part into a disc about 1 cm thick.
- Place half of the meat mixture in the center of one disc. Fold the edges over to encase the filling, sealing it well. Repeat with the second disc and remaining meat mixture.
- Brush the tops of each Kibbeh with the remaining olive oil.
- Place the Kibbeh on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.
- Remove from the oven, let cool for a few minutes, then slice and serve warm, garnished with chopped parsley.
