Ingredients

  • bulgur wheat - 100 grams
  • ground lamb - 200 grams
  • onion - 1 medium, finely chopped
  • pine nuts - 30 grams, toasted
  • cinnamon - 1/2 teaspoon
  • allspice - 1/2 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • olive oil - 2 tablespoons
  • water - 200 milliliters
  • plain yogurt - 100 grams (for serving)
  • fresh mint leaves - for garnish

Steps

  1. Soak the bulgur wheat in 200 milliliters of water for about 30 minutes until it absorbs the water and softens.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  4. Stir in the toasted pine nuts, cinnamon, allspice, salt, black pepper, and chopped parsley. Remove from heat and let it cool.
  5. Once the bulgur is soaked, mix it with the cooled lamb mixture in a bowl. Combine well to form a dough-like consistency.
  6. Divide the mixture into 4 equal portions and shape each portion into an oval patty, about 1.5 cm thick.
  7. Preheat your grill or grill pan over medium-high heat and brush with the remaining olive oil.
  8. Grill the kibbeh kebabs for about 5-7 minutes on each side until they are nicely browned and cooked through.
  9. Serve the kibbeh kebabs hot with a side of plain yogurt and garnish with fresh mint leaves.
