Ingredients
- Ground lamb - 250 grams
- Almond flour - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
- Cinnamon - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Feta cheese (or Paleo-friendly cheese) - 100 grams, crumbled
- Egg - 1 large
- Water - 50 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the ground lamb to the skillet, stirring until browned. Season with cinnamon, allspice, salt, and black pepper. Cook for 5-7 minutes.
- Stir in the toasted pine nuts and chopped parsley, then remove from heat and let cool slightly.
- In a bowl, combine almond flour, crumbled cheese, egg, and water. Mix until a dough forms.
- Divide the dough in half. Press half of the dough into the bottom of a greased baking dish to form the base.
- Spread the lamb mixture evenly over the dough, then top with the remaining dough, spreading it gently to cover.
- Drizzle the top with the remaining olive oil and score the surface with a knife for easy servings.
- Bake in the preheated oven for 25-30 minutes, until golden brown.
- Let cool for a few minutes before slicing and serving warm.
