Ingredients

  • Ground lamb - 250 grams
  • Almond flour - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Cinnamon - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Feta cheese (or Paleo-friendly cheese) - 100 grams, crumbled
  • Egg - 1 large
  • Water - 50 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the ground lamb to the skillet, stirring until browned. Season with cinnamon, allspice, salt, and black pepper. Cook for 5-7 minutes.
  4. Stir in the toasted pine nuts and chopped parsley, then remove from heat and let cool slightly.
  5. In a bowl, combine almond flour, crumbled cheese, egg, and water. Mix until a dough forms.
  6. Divide the dough in half. Press half of the dough into the bottom of a greased baking dish to form the base.
  7. Spread the lamb mixture evenly over the dough, then top with the remaining dough, spreading it gently to cover.
  8. Drizzle the top with the remaining olive oil and score the surface with a knife for easy servings.
  9. Bake in the preheated oven for 25-30 minutes, until golden brown.
  10. Let cool for a few minutes before slicing and serving warm.
