- Bulgur wheat - 100 grams
- Canned chickpeas - 200 grams, drained and rinsed
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Whole wheat burger buns - 2
- Tahini - 3 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
Steps
- Cook the bulgur wheat according to package instructions, usually by soaking it in hot water for about 15 minutes until fluffy.
- In a large mixing bowl, combine the cooked bulgur, chickpeas, red onion, garlic, parsley, cumin, cinnamon, allspice, salt, and black pepper.
- Use a fork or potato masher to mash the mixture until well combined but still slightly chunky.
- Form the mixture into 2 equal-sized patties and refrigerate for 10 minutes to firm up.
- Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- In a small bowl, whisk together tahini, lemon juice, and water to create a smooth sauce.
- Toast the burger buns in the same skillet for 1-2 minutes until lightly golden.
- Assemble the burgers by spreading tahini sauce on the bottom bun, adding a lettuce leaf, the patty, tomato slices, and cucumber slices, then topping with the top bun.
