Ingredients

  • Bulgur wheat - 100 grams
  • Canned chickpeas - 200 grams, drained and rinsed
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Whole wheat burger buns - 2
  • Tahini - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced

Steps

  1. Cook the bulgur wheat according to package instructions, usually by soaking it in hot water for about 15 minutes until fluffy.
  2. In a large mixing bowl, combine the cooked bulgur, chickpeas, red onion, garlic, parsley, cumin, cinnamon, allspice, salt, and black pepper.
  3. Use a fork or potato masher to mash the mixture until well combined but still slightly chunky.
  4. Form the mixture into 2 equal-sized patties and refrigerate for 10 minutes to firm up.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
  6. In a small bowl, whisk together tahini, lemon juice, and water to create a smooth sauce.
  7. Toast the burger buns in the same skillet for 1-2 minutes until lightly golden.
  8. Assemble the burgers by spreading tahini sauce on the bottom bun, adding a lettuce leaf, the patty, tomato slices, and cucumber slices, then topping with the top bun.
