Ingredients
- Fine bulgur wheat - 100 grams
- Lean ground lamb or beef - 250 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Ground cinnamon - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 3 tablespoons
- Water - 200 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Tomato - 1 medium, sliced for topping
- Yogurt - for serving
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the bulgur wheat with 200 ml of water and let it soak for about 20 minutes until the water is absorbed.
- In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until translucent.
- Add the ground meat to the skillet, and cook until browned. Stir in the cinnamon, allspice, salt, black pepper, and parsley. Remove from heat and let cool slightly.
- Once the bulgur is ready, mix it with the meat mixture until well combined.
- Grease a baking dish with 1 tablespoon of olive oil. Spread half of the kibbeh mixture evenly in the dish to form a base layer.
- Sprinkle the toasted pine nuts over the base layer, then add the remaining kibbeh mixture on top, pressing down gently to form an even layer.
- Top with sliced tomatoes and drizzle with the remaining olive oil.
- Bake in the preheated oven for about 30 minutes, or until the top is golden brown.
- Allow to cool for a few minutes before slicing and serving with yogurt.
