Ingredients

  • Fine bulgur wheat - 100 grams
  • Lean ground lamb or beef - 250 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Ground cinnamon - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons
  • Water - 200 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, sliced for topping
  • Yogurt - for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the bulgur wheat with 200 ml of water and let it soak for about 20 minutes until the water is absorbed.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until translucent.
  4. Add the ground meat to the skillet, and cook until browned. Stir in the cinnamon, allspice, salt, black pepper, and parsley. Remove from heat and let cool slightly.
  5. Once the bulgur is ready, mix it with the meat mixture until well combined.
  6. Grease a baking dish with 1 tablespoon of olive oil. Spread half of the kibbeh mixture evenly in the dish to form a base layer.
  7. Sprinkle the toasted pine nuts over the base layer, then add the remaining kibbeh mixture on top, pressing down gently to form an even layer.
  8. Top with sliced tomatoes and drizzle with the remaining olive oil.
  9. Bake in the preheated oven for about 30 minutes, or until the top is golden brown.
  10. Allow to cool for a few minutes before slicing and serving with yogurt.
