Ingredients

  • Bulgur wheat - 100 grams
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Pine nuts - 30 grams, toasted
  • Olive oil - 2 tablespoons
  • Ground cinnamon - 1 teaspoon
  • Allspice - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 200 milliliters
  • Yogurt - 100 grams, for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the bulgur wheat in warm water for about 15 minutes until softened, then drain.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon, about 10 minutes.
  5. Stir in the pine nuts, ground cinnamon, allspice, salt, and black pepper. Cook for another 2 minutes. Remove from heat and mix in the chopped parsley.
  6. In a mixing bowl, combine the soaked bulgur wheat with half of the meat mixture and mix well.
  7. Grease a baking dish with 1 tablespoon of olive oil. Spread half of the bulgur mixture evenly at the bottom of the dish.
  8. Layer the remaining meat mixture over the bulgur layer, spreading it out evenly.
  9. Top with the remaining bulgur mixture, smoothing the surface with a spatula.
  10. Score the top layer with a knife into diamond shapes to create portions and drizzle with a little olive oil.
  11. Bake in the preheated oven for 25-30 minutes until the top is golden brown.
  12. Let it cool slightly before cutting into pieces. Serve warm with yogurt on the side.
