Ingredients
- Bulgur wheat - 100 grams
- Ground lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Pine nuts - 30 grams, toasted
- Olive oil - 2 tablespoons
- Ground cinnamon - 1 teaspoon
- Allspice - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 200 milliliters
- Yogurt - 100 grams, for serving
Steps
- Preheat the oven to 180°C (350°F).
- Soak the bulgur wheat in warm water for about 15 minutes until softened, then drain.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon, about 10 minutes.
- Stir in the pine nuts, ground cinnamon, allspice, salt, and black pepper. Cook for another 2 minutes. Remove from heat and mix in the chopped parsley.
- In a mixing bowl, combine the soaked bulgur wheat with half of the meat mixture and mix well.
- Grease a baking dish with 1 tablespoon of olive oil. Spread half of the bulgur mixture evenly at the bottom of the dish.
- Layer the remaining meat mixture over the bulgur layer, spreading it out evenly.
- Top with the remaining bulgur mixture, smoothing the surface with a spatula.
- Score the top layer with a knife into diamond shapes to create portions and drizzle with a little olive oil.
- Bake in the preheated oven for 25-30 minutes until the top is golden brown.
- Let it cool slightly before cutting into pieces. Serve warm with yogurt on the side.
